Between recent gigs I had the pleasure of stopping in Omro, Wisconsin, for a sleepover with some friends from Colorado. Their polycultural, sustainable Foxwood Farm—with its raw milk products, free-range eggs, veggies, and herbs—was a fascinating place to spend a morning. So much activity!
A few years back—it was over roasted pumpkin soup, or maybe hot buttered rum at altitude in Colorado—Andrew and Becky leaned back, looked at the rest of us around the table and said something that at the time seemed really hopeful, if kind of crazy.
We're going to Wisconsin, they said. We're going to keep cows and make artisan cheeses.
And that's just what they did.
